Coming Soon: The Yeast Bank

Brewers yeast - S. cerevisiae has a posseIt is frequently said: “brewers make wort, but yeast makes beer.” Yeast, in my opinion, is the most important ingredient of a beer; it’s not only the source of glorious alcohol, but the main contributor to off-flavors. Even if you create the most exquisite batch of wort the world has ever seen, if the yeast is treated poorly no one will be coming back for a second pint. The sooner you realize that brewers are just glorified yeast wranglers, the sooner the quality of your beer will improve.

A common anxiety that many new (and even long-time) homebrewers have is “is my yeast looking/acting/smelling like it should!?” I know my heart always skips a beat every time I use a new strain and it looks or behaves differently from previous batches, “this time for sure I’ve screwed it up and I’m on the express train to Infection City!” To combat this anxiety I’ve had this idea percolating in my head for a while: why not document the yeast I use as I put it through its paces as a visual and empirical guide to all the different aspects of our good buddies S. cerevisiae and friends.

Guinness Secrets Revealed!

I was recently in Dublin, Ireland as a sponsor of the European Beer Bloggers Conference and had the opportunity to go on an excursion to Guinness’ St. James Gate Brewery. Besides getting to see Guinness’ brand-spanking-new brewhouse, we went on a personal tour led by Master Brewer Fergal Murray, had a beautifully paired beer dinner, and ultimately had the opportunity to sit down with Fergal and a handful of Guinness brewer/engineers for a Q&A session. Of course, being in a room of all the top European beer bloggers you can be assured that no punches were pulled in the questions for this elite crew. Unfortunately, I was ill-equipped to record the questions or answers, but I did retain a handful of key responses for the topics that I often hear homebrewers chattering about. Sagas & Suds: Beers of Iceland

For the past few years I’ve guest blogged on my friend Kristofor Barnes’ excellent SoCal craft beer and homebrew enthusiast site Bierkast. One of the first articles I wrote was a review of the Icelandic beers I had a chance to sample when I took a trip for work. In the sprit of synergy (i.e. it’s too much trouble to port the content over here), please cruise on over there and check it out!

Einstök logoI recently had the opportunity to take a trip to Reykjavik, Iceland for work and set out to sample and learn about as many Icelandic beers as I could get my hands on. There are actually quite a few breweries and beers native to Iceland, as the perfectly-pure, glacier-fed water is a boon to brewers worldwide. I’m focusing only on the beers I personally sampled, as there are far too many to list otherwise, and I’m including quotes from the breweries themselves, where possible. From seasonal craft ales to mass-produced light lagers, Iceland has something for everyone. Skál!

F’ Everything, We’re Doing Five Blades

As my first official post I’d like to address a question that folks ask my with some frequency: what is the origin of your sites’s name? You see, a lot goes into naming something: the name summarizes the expectations and aspirations of the object that is encapsulates. I wanted to chose a name that motivated me to be bold, to take chances, and to fly in the face if everything that I already thought possible. Here it is, the secret origin of Five Blades Brewing!

F' Everything We're Doing Five BladesWhat part of this don’t you understand? If two blades is good, and three blades is better, obviously five blades would make us the best f’ing razor that ever existed. Comprende? We didn’t claw our way to the top of the razor game by clinging to the two-blade industry standard. We got here by taking chances. Well, five blades is the biggest chance of all.
